chicken & dumplings

ingredients

1 to 1.5 pounds of chicken, cooked and chopped

4 Tbsp salt

1 package of frozen dumplings

6 - 8 whole carrots (optional)

1 can cream of chicken

6 - 7 cups chicken broth


directions

  1. Place 8 cups of water and 4 Tbsp of salt in a large pot and boil chicken until cooked thoroughly (roughly 30-35 minutes).
  2. Peel whole carrots and cut into thin slices; set to side.
  3. When chicken is done, remove and set to side for chopping.
  4. Add cream of chicken and carrots to chicken broth that was made by cooking the chicken.
  5. Cook dumplings of choice per package instructions.
  6. While dumplings are cooking, chop chicken. Add back to pot when dumplings are tender.

simplify tip:

A rotisserie chicken can be used; just sub chicken broth from the store to cook the dumplings.
